The DVD editing could be better - chapters are not arranged to move you to the beginning of the separate recipes - it would help if they were arranged that way

The guy really reckons Italians use tinned Tuna as a topping for VEAL! He is something very special. The "Culinary Institute of America" has long been a joke around the world; now I see clearly why. I am not one to return things: Caveat Emptor has always been my motto however this is such a shambles, it must go back. The "Lecturer" has all the ability of road kill & clearly has no idea at all about anything other than burgers. A waste of money & I hope to return it & maybe get a credit for something worthwhile. I shall never waste hard earned cash on any course which has CIA on it, ever again. Save your money, dine out!

Rated 5 out of 5 by from Course title describes exactly what you are gettin This is the second Bill Briwa course I have purchased, and it is excellent, as it builds on information from my first course, and is well organized by types of cuisines for Mediterranean countries. The wire binding on the course book is a great improvement over the first course which has a bound binding (pages disconnect from the binding and can fall out). The DVD lessons are invaluable, because they show and explain, the techniques that are most useful in preparing the individual dishes. Overall another Great Course.

Rated 5 out of 5 by from More to Mediterranean food than I thought I hate fish, and all I had heard about Mediterranean food is fish, vegetables, olive oil, Greece, and Southern France. So, I took a chance on this course and was happy to learn of the great variety of foods, spices, and countries covered in this course. Each lesson is a trip to another country surrounding the Mediterranean. For me, foods and spices from countries such as Morocco and Tunisia had the greatest appeal. Spice mixtures such as Dukkah are delicious on a variety of foods. The last course is about bringing the Mediterranean home, basically getting creative with what was learned. The course guide has recipes, which are helpful to me for making spice mixtures, but after taking this course, I do not feel constrained to follow recipes exactly. Understanding the food permits that, and the Chef brings that out in the course.

For us living in Europa it is quite a hassle to "translate" all the measurments into European standard. It could be a good point to have it mentioned in the description, so when you think about buying the course you will know, and then one could decide to buy it or not. But, as I said, the course is great

Rated 5 out of 5 by from Superb course The course content is very informative and enlightening, It interested me that the foods available and the climate of the different regions of the Mediterranean region influenced the cuisine so deeply. That the charming Mr. Briwa cooked all those recipes was very instructive. I enjoyed observing the uncluttered way he went about things and the aesthetics of the presentation. I particularly liked knowing about dolmas and falafel, as well as the cod dish and the bouiabaisse. The importance of olive oil and its many varieties was also informative. Next time I spread bitter orange marmalade on toast, I'll definitely add olive oil. I took note of his dishes Mr. Briwa chose and bought similar ones. The last two copper pans/dishes also appealed to me a great deal. Mr. Bajwa's direct, clear, and unassuming communication is very appealing. I would enjoy sitting down at a meal with him. The course is all about the food and the cooking and not about him.

A number of his food selections are high in salt and fat. The reason I took an interest in the Mediterranean cuisine is because it's supposed to be very healthy. Therefore, I was disappointed in the course overall, and cannot recommend it to anyone.

I'm enjoying a lot Bill Briwa's congenial style of presenting his topic -- he presents really helpful cooking hints as well as concise contextual and historical anecdotes. He is informative, but with a light, charming, + human touch which feels just right. The dishes look delicious and inviting and I am looking forward to trying them.

My husband was thrilled when I surprised him with the tabouleh salad and eggplant dish. Now I might not make everything, but I enjoyed how the chef made some nice interpretations in the last class. Next up is the orange and date salad! And the lamb dishes. One is sure to be a Father's Day surprise for my husband. I like how he was very careful to explain techniques and while I cook and have decent technique, there is always something new to learn, like with the couscous. Thanks for a great class.
